Khajoor, anjeer, badam: what the names on our labels mean

Our labels and our product names use the words most people in India actually say, which are not always the English ones. If you have wondered what separates anjeer from khajoor, or what magaj seeds are doing in a trail mix, this is the short version.

Khajoor — dates

Also spelled khajur. The fruit of the date palm, dried until it is sticky and dark. In a sweet it does two jobs at once, which is what makes it so useful: it sweetens, and it binds. Take the dates out of a date bite and there is nothing holding it together.

It is the base of our Date Bites, where it is doing most of the work with almonds, cashews and pistachios folded through it.

Anjeer — figs

Dried figs. Darker, jammier and slightly more savoury than dates, with the seeds giving a faint grittiness that you notice against a smooth nut. Anjeer sets a little firmer than khajoor, which is why Anjeer Bites hold a cleaner edge than a date-based bite does.

In Indian sweet-making anjeer has long been the more expensive of the two, and it still is.

Badam, kaju, pista — almonds, cashews, pistachios

The three nuts that do most of the work across our range. Roughly: badam (almond) brings firmness and a clean snap; kaju (cashew) is softer and sweeter and rounds a mixture out; pista (pistachio) is there as much for the colour as the flavour, which is why you see it on top rather than buried.

Gulkand — rose petal preserve

Not a nut or a fruit but worth knowing. Gulkand is rose petals preserved with sweetness over time until they collapse into a dark, fragrant, jam-like paste. It is eaten by the spoon in summer in a lot of Indian households, and in our Shahi Honey Gulkand Bites it brings a floral note that sits underneath the nuts.

Magaj and the other seeds

Magaj usually refers to melon seeds, and they turn up alongside pumpkin and sunflower seeds in our Super Seeds & Dryfruits Trail Mix and in Nutri Masala Crunch. Seeds are there for texture more than anything — they give a mixture something to catch on, so it does not read as uniformly soft.

Mithai, barfi, laddoo

Mithai is the general word for Indian sweets. Barfi is the flat, set, usually diamond-cut kind. A laddoo is anything rolled into a ball. They describe shape and method rather than ingredients, which is why you can have a barfi made of almost anything.

By those definitions our Energy Balls are a laddoo in all but name, and our bites sit closer to a barfi — cut, set, held in the hand.
